Coeliac Disease has been steadily rising across the globe over the past decade, with over 380,000 Australians now living with the disease. Despite this, a significant number of people go undiagnosed, and for those who are aware of their condition, the experience can feel like a lifetime sentence to eating bland, un-appetising food. Compounded by the myth that gluten-free food is often compared to cardboard in both texture and flavour. So we set out to create a little cake with a big point to prove, and raise much-needed awareness about Coeliac Disease, and gluten intolerance.
