When looking into the target audience’s interests and behavior, we found that they had one thing in common with the National Trust – a great interest in food, and the wish for local and organic ingredients. Scratch is pop-up restaurant drawing food- and trend thirsty Londoners to the countryside – exploring the National Trust locations thru their interest in food. When booking a table at Scratch, you get to be a part of the ingredients journey all the way from soil to plate.
